trust the chef.. beeker edition..*phillippines. may 2

as i was called upon the challenge on such short notice , ive been trying to see what the filipino people bring to the culinary world. i have been trying to look back and see what i used to love eating til now, too what can i call fine dining Filipino food.. so i started naming names of Filipino dishes i thought can match together and form a 5 course harmony .. i ended up with 10ideas.. most of them with rice though.. so i had to weed out 6 because course 5 was my dessert.. today my close buddy did “breakfast for dinner” for our monday weekly trust the chef. He made me realize simple is always more.

so heres my first ever trust the chef menu.. on my take of Filipino fine dining.

course 1 : grilled bitter melon, mango, and tomato salad finished with a sweet soy and grilled lemon vinaigrette.

course 2: sisig lettuce wraps

course 3: shanghai lumpias over a mini mountain of pancit bihon (sides of vinegar and sweet and sour)

course 4 : glazed scallop adobo over a bed of Garlic fried rice.

course 5 : Halo-Halo.. (hello - hello)

halo halo made me smile and tingle a little because i remember watching my mom make them with all my aunts.. brings back memories.. kinda nervous because i have to come out and talk to people.. soo my game plan is to come out when they have dessert so i can say halo halo!!which means hello hello, then thank them for coming, and trying out what my take on filipino food.. hope this all goes well..
